Middle Eastern Lamb Pizza

Ingredients for 4 pizzas:
4 Pizza Bases (approximately 25cm Diameter)
300 grams Lamb Loin, denuded
1 small brown onion diced
6 grams Baharat (two teaspoons) (a rich Middle Eastern spice blend)
2 cloves fresh garlic, chopped
Few sprigs Italian Parsley Chopped (1 Tablespoon)
60ml Tomato Puree, (or Tomato Sugo)
1 Teaspoon (5 grams) sea salt
20 grams pine nuts (1 tablespoon)
1 lemon
Greek yoghurt for drizzling
Fresh flat leaf parsley sprigs for garnish
Some extra Virgin Olive Oil

Method:
Pre heat your oven to its hottest temperature setting. This should be about 250C.
Brown the onion in a small saucepan over medium heat, moistened with a little of the olive oil, reduce heat and keep cooking the onion for a further 10 minutes until it softens. Cool.
Dice the lamb and place into the bowl of a food processor, blitz to a coarse mince consistency
Combine the cooked onion, minced lamb, baharat, garlic, parsley, tomato puree and salt together in a bowl, mix well.
Lay pizza bases onto oven trays, spread the raw lamb topping onto pizza bases evenly. Sprinkle with pine nuts and bake for approximately 6 minutes until the lamb topping is brown and sizzling.
Remove onto serving platters, drizzle with freshly squeezed lemon juice, a dob of Greek yoghurt, a few sprigs of parsley and extra virgin olive oil.
