Beef Brisket Pizza

Brisket is a cut of meat that can be eaten many ways, in a roll on a salad…  though in this episode Theo is giving away the secret to his famous Beef Brisket Pizza using Harvey Beef.

Serves - really, who wants to share their Pizza?

Ingredients

  • 1 pack of Harvey Beef brisket, approximately 700-800gm
  • Theo’s Rub
    • 1 tbsp paprika
    • 1 tbsp garlic powder
    • 1 tbsp onion powder
    • ½ tbsp salt
    • ½ tbsp cracked pepper
  • 1 Pizza Base – Store bought or even better if you make your own
  • 1 clove of Garlic
  • 90gm Mozzarella
  • 1 cup of shredded red cabbage
  • 1 cup of thinly shredded red apple with the skin on.
  • 2 tbsp of mayonnaise
  • Juice of 1 lemon
  • Pinch of salt.

Method – Brisket

  • Preheat oven to 200 Degrees Celsius
  • Combine the spices to create the rub
  • Rub the brisket all over on both sides with the spice rub
  • Put the brisket on a rack in a baking tray and add a litre of water to the tray.
  • Reduce oven to 180 degrees.
  • Wrap in Aluminium foil and cook for 2 ½ hours covered and 30 minutes with the cover off.
  • When the brisket is cool shred with meat and drizzle with your favourite BBQ sauce.

Method – Creating the Pizza

  • Finely Chop the clove of garlic and run over the Pizza base.
  • Add the ripped Mozzarella and 2 cups of the Beef Brisket
  • Place in a preheated oven at 220 Degrees for 5-7 minutes.
  • While the Pizza is cooking you can make the Apple slaw. Combine the red cabbage and apple together in a bowl adding the mayonnaise, lemon juice, and a pinch of salt combining. Once combined add to a mason’s jar.
  • Remove the Pizza and slice
  • Serve with the jar of Apple Slaw.

The combination of the slow cooked Brisket and Apple slaw on the crusty pizza base is just delicious!
