Asparagus Pie

Story Title: Asparagus Pie

Pie Ingredients
Small asparagus
Celery
2 medium sized tomatoes
Parsley
1 cup Parmesan Cheese
1 cup fresh breadcrumbs (2 thick slices. You can use packet breadcrumbs, but fresh is better)
Butter
Salt & Pepper

Salad Ingredients
Blood Orange
Spinach
Red Mustard
Vinegar

Method

  • Pre-heat oven to 180 degrees
  • Line baking dish with finely cut celery
  • Place asparagus lengthwise on top of celery. Make sure the woody end cut off the asparagus, if they are very thick you can slice them in half – otherwise leave whole
  • Place finely chopped tomatoes on the asparagus. You can use tin tomatoes, but not the juice.
  • Slightly season with salt and pepper
  • Crumb mixture sprinkled on top & bake for approx. 20 -25 minutes until crisp and golden
  • While baking, prepare blood orange and spinach salad

Crumb Method

  • Blitz breadcrumbs (you can add parsley here)
  • Add the cheese and mix into breadcrumbs
  • Melt butter into the frying pan and coat cheese and crumb mixture.
